Callum Stewart, 21 and Ebony Platford, 20, went hat-to-hat at TAFE New England’s Tamworth campus in the 2016 Nestlé Golden Chef’s Hat Award.
They took home bronze medals.
Australia’s longest running culinary competition saw the region’s best up-and-coming young chefs step up to the plate, going all out to deliver their best dishes on the day.
Mr Stewart’s and Ms Platford’s bronze-winning menu included a main course of crumbed lamb rack with duxelles stuffing served with glacé carrots and a fennel and potato puree and dessert course of saffron crème brulee served with a coffee tuile and chocolate filigree.
The pair said they entered the award to see how they would stack up against other young chefs. “We wanted to challenge ourselves and try something new,” Mr Stewart said.
Australian Culinary Federation competition director Deb Foreman said: “We applaud all the young chefs that competed.
“Putting yourself up to be judged on your culinary talent among your peers is tough and we know that they will all take a lot from the experience of competing, in honing their skills and gaining more knowledge.”
The awards offered a learning experience for young chefs to push themselves to the next level and advance their culinary careers by being judged to globally recognised standards on the presentation and overall taste of the dishes they created.
